Video: How to Entree Tidal Blades

Apologies for some rough camera angles. I really need to invest in some better equipment and stands. But this is a proof of concept for a new video format so please throw all your feedback at me. Want to learn how to make a previous feast/treat, or have a suggestion, let me know!

Recipe

  • 1 Dozen large raw prawns
  • 1 large/3 small yams or sweet potatoes
  • 2 Tablespoons Japanese Mayonnaise
  • 150ml ice cold water
  • 100g flour
  • Vegetable Oil for frying
  • Toothpicks
  1. Peel and devein prawns, leaving the tail on. Bend the prawns backwards till they snap slightly and lay flat.
  2. Peel the yam and cut lengthways. Cut each half again, parallel to the first cut, such that you remove the curved edges. You should have two long rectangular ‘logs’ that lie flat on the long sides and slightly curved on the short sides.
  3. Slice each log thinly (roughly 1/4 inch or 1/2 cm) to create the ‘wings’ of the flizzers
  4. Poke a toothpick through each prawn, about 1/2 to 2/3 down the length, and pin a yam ‘wing’ on either side, pointing upright.
  5. Fill a deep pot with enough oil to submerge the flizzers and heat to 180C.
  6. While waiting for oil to heat, prepare the batter by mixing flour, water and mayonnaise and whisking thoroughly.
  7. Cook 2 or 3 flizzers at a time (depending on size of pan) by coating thoroughly in the batter and dropping in the oil. Holding the flizzers by the tips of the wings when dropping them in helps keep them upright and the body flat
  8. Cook each flizzer for 3 minutes, remove and drain on paper towels.
  9. Serve with your favorite dipping sauce and fruit as a palate cleanser (honeydew melon works wonderfully)
